Healthier eating always seems to be the topic of conversation for the month of January. Nearly everyone has resolved to eat healthier. Unfortunately, for most people that resolution is dead before the month is up let alone the year. One way to keep yourself on the path to healthier eating is to make sure that you have an arsenal of healthy recipes that are delicious. What is more delicious than the food that you grill on your Kokomo BBQ Island? We have gathered a few recipes to get you started on the path to healthier cooking using your grill, so the meal is not only delicious, but also fun to fix.

Meat

Cooking meat is probably the first thing that you think of when cooking on your grill. Changing up the type of meat and the way that you season it is a great way to make the meat that you would normally grill the perfect start to a healthy dinner. Here is a great recipe for Salmon Lemon Kabobs from Natasha’s kitchen that will leave your taste buds happy and give you a great dose of Omega 3.
You will need:
1.5 lbs of salmon fillets, cut into 1 inch squares
2 large lemons, thinly sliced
16 bamboo skewers, soaked in water for at least an hour
For the Marinade:
2 Tbsp parsley, freshly chopped
2 large garlic cloves, pressed
½ Tbsp Dijon mustard
½ tsp salt
⅛ tsp pepper
2 Tbsp light olive oil (not extra virgin, it has too low of a smoke point)
2 Tbsp fresh lemon juice
Preheat your grill to a medium heat. In a medium bowl, stir together all of the marinade ingredients. Skewer the salmon with lemon slices folded in half randomly throughout the skewer. It is recommended that you use two skewers for each kabob to make it easier to turn on the grill. Brush both sides of the skewered salmon and lemons with marinade. Brush the grill grates with a little bit of oil, then grill the kabobs for 3-4 minutes on each side until the salmon is cooked through. Pair these salmon kabobs with some vegetables and rice and you have a delicious meal.

Vegetables

Veggies are another great thing to throw on your BBQ Island. Vegetables are at the top of the list when it comes to healthy eating. Putting them in the grill adds a great flavor. Here is a recipe for Lemon Garlic Grilled Zucchini from Dashing Dish that your family will love.
You will need:
2 large zucchini, cut into ½ inch diagonal slices
1 tsp dried Italian seasoning
2 tsp minced garlic
½ tsp dried garlic
½ tsp salt
¼ tsp pepper
2 Tbsp lemon juice
1 tsp olive oil
Place everything in a large ziplock bag and shake to coat. Let it marinate in the fridge for at least 15 minutes. Preheat the grill to a medium-low heat and place the zucchini directly on the grill. Let it cook on each side for 2-3 minutes, until it is tender.

Dessert

Dessert is something that you might not think about cooking on your grill but it is a great healthy way to get a little sweetness at the end of your meal. Grilled cinnamon pineapple is an easy sweet treat to start with grilling.
You will need:
4 cups of fresh pineapple
1 teaspoon cinnamon
Bamboo skewers
Heat your grill between 325-375 degrees. Simply place your pineapple chunks on bamboo skewers that have been soaked for 5-10 minutes in water. Sprinkle the pineapple chunks with cinnamon. Put them on the grill for 5 minutes, turn and cook another 5 minutes until tender.
